7 steps

The method

01

Bring a pot of water to boil. Gently lower 6 eggs, boil for 7 mins (the yolks should be soft and slightly moist).

02

Meanwhile, cut the cucumber into strips about the length of your bread slices, then thinly slice them.

03

In a bowl, mix together the mayo, sambal and greek yogurt.

04

Once the eggs are done, transfer them to an ice bath and gently peel. Separate the yolks from 3 eggs and mash them into the mayo mixture. Chop the whites into your desired size and fold them in. Slice the remaining 3 eggs in half.

05

Lay a piece of cling film on your work surface and place 1 slice of bread on top. Arrange cucumber, then egg mayo mixture. Place the halved eggs in the centre and top with a layer of lettuce.

06

Spread a thin layer of sambal on another slice of bread and place it on top to close the sandwich.

07

Wrap the sandwich tightly with the cling film, pressing out any air as you go.
